1. Khandsari shall be-

1. in crystalline or powder form.
2. white or yellowish white in colour.
3. sweet in taste.
4. free from dirt, filth, iron filings and added colouring matter.

2. Variety/type (to be filled by assayer)

1. Khandsari (Desi): Khandsari obtained from sugarcane juice using open pans for concentration and clarified using natural clarificants.
2. Khandsari (Sulphur): Khandsari obtained from sugarcane juice using open pans for concentration and clarified using sulphur.

4. Criteria for range designation.

1. 5 % or minimum one container shall be randomly selected for sampling.
2. 500 gm shall be drawn from each selected container and shall be mixed homogenously, called as primary sample.
3. 500 gm shall be drawn from primary sample called as Laboratory sample
